For the dough
Mix the butter with the flour in a bowl to make a crumb.
Add the sugar and salt and mix.
Add the yolks and the brandy and mix until it is homogenous and becomes a soft dough.
Leave it in the bowl to rest, and cover it with a towel until we prepare the apples.
Roll out the dough with your fingers to spread over a 28cm diameter tart pan, including the walls.
Put in the apple filling.
Grate the crumble on top of the apples.
Bake the apple pie in a preheated oven for 40–45 minutes at 180° C.
Take out the apple pie, leave it to cool, unmold it, and sprinkle it with cinnamon.
Execution for the stuffing
Put the apples and sugar in a large pan over high heat, stirring frequently until the apples absorb the liquids.
Add the lemon juice
Remove the pan from the heat and add the cinnamon.
Set aside to cool.
Execution for the crumble
Mix all the ingredients together, wrap them in cling film, and put in the freezer until needed.
