Prepare and season the chicken with salt and pepper.
Wash the carrots without peeling them.
Clean and cut the sweet potatoes and the regular potatoes into wedges.
In a roasting pan, place the vegetables along with the chicken.
In a bowl, mix by hand the orange juice, the lemon juice and the honey, then pour the mixture over the chicken and vegetables.
Season with salt and pepper and cover the roasting pan with its lid.
Roast in a preheated oven at 200°C for 30 minutes.
Remove the lid and let it roast for another 25-30 minutes until it gets a nice color.
After taking the roasting pan out of the oven, set aside the delicious juice that has been created during roasting and strain it, so you can serve it as a sauce when you sit at the table
